Combine tequila, orange juice, and ice in a blender; process until smooth, then divide and pour mixture into two
glasses. Carefully drizzle 1 tablespoon o grenadine around inside rim of each glass.
Notice how the grenadine
sinks to the bottom of the glass and create that lovely sunrise effect. Tip: You can also pour it on the bottom and
drizzle some on top of each drink. Finish by garnishing with orange fans if using, and serve.
Arctic Mint Julep
To make 2 drinks, you will need:
* 6 teaspoons fresh Mint syrup
* 2 ounces bourbon
* 1 2/3 cups small ice cubes
* Mint sprigs, for garnish
Pour 2 teaspoons mint syrup into each glass then combine bourbon and ice in a blended and process until
smooth. Spoon bourbon mixture into each glass and drizzle another teaspoon of mint syrup on top of each drink.
Finish by garnishing with a mint sprig, and serve while still chilled.
To make about 3/4 cup of Mint Syrup, you will need: 1 bunch fresh mint, leaves only (2 cups packed), and 3/4 cup
Simple Syrup. Fill a large bowl with ice and water, set aside and bring a saucepan of water to a boil. Add mint;
cook just until bright and wilted, 3 to 5 seconds then using a slotted spoon, transfer to ice bath briefly.
Drain well
then combine syrup and mint leaves in a blender and process until pureed. Let this stand for 10 minutes and let it
pass through a fine sieve, pressing down firmly to extract as much syrup as possible. Discard the solids then store
in an airtight container in the refrigerator, for up to 5 days, until ready to use.
To make about 3 cups of Simple Syrup, you will need: 3 cups sugar and 1 1/2 cups water. Fill a large bowl with ice
and water; set aside, then combine sugar and water in a small saucepan.
Place over medium-high heat then cook,
stirring frequently, until sugar is completely dissolved, for about 4 minutes. Transfer syrup to a medium bowl, and
place bowl in the ice bath until chilled then store in an airtight container refrigerated, for up to 2 months.
