Fruity Christmas Pudding Duo

Warm and tender-to-the-bite pudding is always a hit on Christmas dinner table especially on cold winter nights.

How about sampling two takes on our favorite pudding? -- In the sense classic and modern.

Walnut-Raisin Pudding

Our classic Christmas recipe version is the delectable Walnut-Raisin Pudding.

This one got rice, fruit, and nuts for added flavor and vitamins. For a serving of four you will need:

* 1/2 cup orange juice
* 1 egg yolk
* 1 teaspoon honey
* 1 teaspoon vanilla extract
* 2/3 cup cooked rice
* 1/4 cup raisins
* 1/4 cup chopped toasted walnuts

You will also need 3 egg whites to help the pudding set aside from the high protein benefits that you can get. You may make ready a vegetable oil spray. It would take you about 12 to 15 minutes preparing the ingredients.

While you are preheating your oven to 325F, in a large mixing bowl mix the orange juice with the honey, egg yolk, and vanilla extract. Slowly stir in the cooked rice, toasted walnuts and raisins.

In another bowl, whip egg whites to all soft peaks to form. With a large metal spoon, carefully fold the whipped egg white into our Christmas recipe mixture.

Prepare 4 custard dishes that have been lightly sprayed with vegetable oil. Pour the prepared mixture into the dishes and place them in a baking pan, referably 13” x 9” x 2”.

Bake the pudding in a water bath by carefully adding boiling water to the baking pan to a depth of about 1 inch to keep the pudding from curdling. Bake, uncovered, for around 30 to 35 minutes and occasionally check the water filling up as necessary to prevent it from boiling away.

Microwave Pudding

Our modern Christmas recipe version is quicker to bake, aptly called “Microwave Pudding,” but not without a burst of fruity flavors. For a serving of 5, prepare:

* 25g dried chopped apricots
* 150g dried mixed fruit
* 50g moist dried chopped figs
* 50g chopped glace mixed fruits – preferably one with pineapple and apricots
* 1/4 cup sweet sherry
* 1/4 cup brown sugar
* 75g softened butter
* 1egg
* 1/4 cup smooth apple sauce
* 1/4 cup plain sifted flour
* 1/2 cups fresh breadcrumbs
* 3/4 teaspoons mixed spice
* 1/2 tablespoon Parisienne essence

In a large microwave-safe bowl, place the combo of dried and glace fruits then pour over sherry. Put in a microwave on medium-low setting for 10 minutes and let it cool. Using electric beaters, mix butter and sugar in a large bowl until pale and creamy then beat in the egg.

Add the fruit mixture and remaining ingredients into our Christmas recipe. Grease lightly a microwavable pudding basin lining the base with baking paper. Spoon the mixture in, cover the pudding with a baking paper. Microwave on medium-low for 35 minutes and serve with vanilla custard.
