To make 7 dozen, you need:
* 4 (10-ounce) fresh lobster tails, meat removed and coarsely chopped
* 12 tablespoons butter
* 1/2 cup green onion, minced
* 1/2 cup bell pepper, minced
* 1 cup dry white wine
* 8 cloves garlic, minced
* 2 tablespoons fresh lemon juice
* 2 (8-ounce) package cream cheese
* 7 dozen toasted bread rounds
* Fresh chives, chopped; for garnish
In a large skillet, melt butter over medium heat then add green onion, garlic and bell pepper; cook, stirring
frequently, gently for 5 minutes. Gradually stir in white wine and fresh lemon juice; cook for further 5 minutes.
Add
the fresh lobster tails and proceed cooking for 3 to 5 minutes, stirring occasionally to check until lobster turns firm
and pink. Add cream cheese, stirring until combined well. Simmer on low heat for another minute and
immediately remove from heat. Arrange toast rounds and spoon lobster mixture evenly on top then garnish with
chopped fresh chives.
Delicious lobster takes a new spin in this appetizing dish, and versatile, too for formal Christmas or New Year
dining, cocktail party or a casual after-Christmas shopping lunch. Still, some may pass on the pricey lobster.
A
less expensive substitute to this novel Christmas recipe would be 2 pounds of peeled, deveined medium shrimp.
Else, you can also use any combination of shrimp, lump crabmeat or lobster as a variation.
